ZA'ATAR
Za'atar is a Middle Eastern blend which varies from region to region with ratios changing considerably. Our version has thyme, cumin, coriander, sumac, sesame seeds, aleppo pepper and oregano. It is generally mixed with olive oil and spread on pita/flatbread. It works well on grilled fish, meat and vegetables (especially potatos) and can be sprinkled on salads. We have included some inspirational suggestions below.

ZA'ATAR BAKED FETA
8 oz block of feta cheese (preferably in brine)
2 tbsp extra virgin olive oil
2 tbsp honey
1 ½ tsp za'atar
1 tsp dried oregano
Optional: handfull of cherry tomatoes
Crackers, pan toast bread or warm pita bread, or pita chips for serving
Place the block of feta into a small oven-safe dish or cast-iron skillet, oven at 190°C (375°F).Drizzle the olive oil over the top of the feta. Bake for 15 minutes until the cheese begins to soften. Drizzle or top the warm feta with the honey, za'atar, and oregano. Broil for 3 to 5 minutes until the top is lightly toasted and golden.
Finish with an extra pinch of za'atar and serve with the flatbread or crackers.
